Homemade Gluten Free Energy Bars


As a part of our "get healthy, eat only real food" thing, Mac and I decided to make at home some of the snacks we usually buy.  I've been eating the Lara bars for a few months and enjoyed them but I needed a change.  Enter our Homemade Energy Bars.  These things are so freaking good! They've got the whole salty and sweet thing going on that I love.  One batch will last me two weeks and they're really easy to make.  And best of all, they contain all real ingredients.  How scrumptious!

Jen's Homemade Energy Bars

1/2 cup Coconut Oil

1/2 cup peanut butter

1 tsp vanilla extract

4 tbsp honey


1/2 cup dark chocolate

1/2 cup raw pumpkin seeds

1/2 cup rolled gluten free oats

1 cup almonds

1/2 dried berries

2 tsp cinnamon

dash of sea salt


Put the chocolate and almonds into a food processor and chop on high for about 15 seconds.  Add the rest of the dry ingredients and chop for another 10 seconds. Melt the wet ingredients in a microwave.  I melt the coconut oil first then add the rest in.  It mixed a whole lot better this way. Once they're all melted together, combine the wet and dry mixtures and mix thoroughly.  

Pour mixture into a foil lined 8x8 pan and place in the freezer for about 30 minutes. Cut into bars and store in the fridge. I highly recommend storing in the fridge due the fact that coconut oil melts at just above room temperature and they tend to fall apart if left out.  I eat mine straight out of the fridge and they're perfect.  Soggy energy bars are not so energetic, am I right?     1. Thanks! No new camera, still rocking my Sony a55 DSLR, but I got a macro lens for Christmas so I've been playing with it a bit. And I finally took pictures during the daylight instead of at 8pm when I finally get around to it. That probably helps....
